Your way is one way to do it. You could also make a template forcing each axis to be a column, or just manually create it, though IMO, the template is probably fastest (once you get it set up), and the scatter plot --> other type of chart is second fastest.

I am sure there are other ways to do it, but in my old age I need something hassle (and thinking) free

I tested your supposition in Office 365 - it's there.
I have no idea why this was done, but I do seem to NOT having this issue when I worked for my Masters degree some 11-12 years ago, so...
