Quick Viewer Show Text, Not Hex

Please advise how I can have the Quick Viewer show text (.doc, .txt., etc.), and not hex values.

The quick viewer will display pure text files as text; and also render html & rtf "text" files correctly; BUT ... if it sees non-printable control characters, then it assumes the file is non text and will display the file in hex format unless you have set Tools | Options... | Window [x] No hex preview. -- In which case you get no preview at all. :(
